Ingredients
2 zucchini
2 Tbs fresh lemon juice
1 Tbs olive oil
1/2 tsp salt
1/2 tsp black pepper
Quinoa-Apricot Salad with Sweet Onion Dressing, for filling
Directions
  1. Cut the zucchini lengthwise. Use a spoon to remove the seeds and some flesh from the middle of each zucchini to create a trough for filling. In a small bowl, combine the lemon juice, oil, salt and pepper. Pour over the zucchini, and rub into the flesh.
  2. Heat grill to high. Place zucchini, flesh-side down, on the grates. Cook for 5 minutes or until zucchini soften and grill marks appear on edges. Remove from grill.
  3. Fill with the Quinoa-Apricot Salad.
