Biscuit Chicken Pot Pie

Ingredients
1 Brookshire’s Rotisserie Chicken (approx. 3 cups cooked chicken)
1/2 cup (1 stick) butter
1/2 cup all purpose flour
3 cups chicken broth
1 cup milk
1 cup frozen peas, thawed
1 cup frozen carrots, thawed
2 cups frozen skillet potatoes, thawed
2 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
12 to 16 Brookshire’s Refrigerated Buttermilk Biscuits
Directions
  1. Preheat oven to 375° F.
  2. Remove all of the meat from the rotisserie chicken. Set aside.
  3. In a saucepan, melt the butter over medium heat.
  4. Whisk in the flour.
  5. Slowly add the broth while whisking.
  6. Add the milk.
  7. Continue to whisk until sauce is thick and begins to bubble.
  8. Stir in the vegetables, seasonings and chicken.
  9. Pour into a 9 x 13 or large oval dish.
  10. Place the biscuits on top of the filling about 1/2 inch apart.
  11. Bake for 30 to 40 minutes until biscuits are golden and cooked through and filling is bubbly.
