Apple-Cinnamon Streusel Bread

Ingredients
1/3 cup all purpose flour
1/3 cup light brown sugar
2 Tbs pecan pieces
1/2 tsp cinnamon
3 Tbs cold unsalted butter, cubed
2 1/2 cups all purpose flour
2 1/2 tsp baking powder
1 tsp salt
2 tsp cinnamon
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
2 large eggs, beaten
1/2 cup unsalted butter, melted
1 cup milk
2 tsp vanilla
1 large apple, peeled and chopped
Directions
- Preheat oven to 350° F. Spray a 9 x 5 loaf pan with nonstick spray. For the streusel, combine the flour, brown sugar, pecans and cinnamon in a small bowl. Add the cold butter. Use your fingers to squeeze and combine into a crumbly, wet sand-like consistency. Place in the refrigerator until ready to use.
- In a large bowl, whisk together the flour, baking powder, salt and cinnamon. In another bowl, stir together both sugars, eggs and melted butter until well-combined. Add the milk and vanilla. Stir until combined. Add this mixture to the flour mixture. Stir until just combined. Fold in the chopped apples.
- Pour the batter into prepared pan, smoothing the top. Sprinkle the streusel topping on the batter. Bake for 1 hour or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes. Run an offset spatula around the edges of the pan to release the bread. Carefully remove the loaf from the pan. Slice to serve.
