Beer Can Roasted Chicken

Ingredients
1 (4 to 5 lb) whole chicken
1 (12 oz) can of beer, divided
3 Tbs butter, room temperature
1 Tbs honey
1 tsp paprika
1 tsp salt
1/2 tsp dried thyme
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp black pepper
1/4 tsp dried mustard
Directions
- Preheat oven to 375 degrees. Place the chicken in a roasting pan. Turn the beer on its side and use a bottle opener to cut a 1-inch hole in the side of the can. Reserve 1/2 cup of beer. Place the can in the cavity of the chicken.
- In a bowl, combine the butter, honey and remaining ingredients. Stir together and drizzle in the reserved beer. Pour the mixture over the chicken and rub into the skin.
- Place in the oven and cook for 1 1/2 to 2 hours or until the chicken reaches an internal temperature of 165 degrees when an instant read thermometer is inserted into the thickest part of the thigh.
- When ready, use tongs to carefully remove and discard the can.
