Ingredients
2 tsp salt
2 tsp ground sage
1 tsp mustard powder
1 tsp ground black pepper
1 tsp garlic powder
8 chicken legs and thighs
2 Tbs vegetable oil
1/2 cup white wine
2 apples, cut into 1/2-inch wedges
2 shallots, sliced
1 cup chicken broth
1 cup apple cider
1/3 cup heavy cream
fresh sage leaves, for garnish
Directions
  1. Preheat oven to 325° F. In a bowl, combine the salt, ground sage, mustard powder, pepper and garlic powder. Rub the seasoning over the chicken pieces. Using a large deep skillet, add the oil over medium-high heat. Sear the chicken until golden, about 4 minutes per side. Add the wine to deglaze the pan. Add the apples and shallots around the chicken. Pour in the broth and cider. Bring to a simmer, and cover the pan.
  2. Transfer to oven. Cook for 30 minutes or until chicken is cooked through. Transfer the chicken, apples and shallots from the pan to a serving platter. Cover to keep warm. Place skillet on the stove. Bring the remaining liquid to a simmer. Add the cream, and bring to a boil. Whisk until sauce is thickened, about 5 minutes. Turn off heat. Add sage leaves. Spoon the sauce over the chicken.
