Creamy Christmas Fruit Salad

Ingredients
4 oz cream cheese, room temperature
1/4 cup granulated sugar
1 (15 oz) can crushed pineapple, drained
1/2 cup sweetened coconut flakes (plus more for garnish)
3 mandarin oranges, peeled and segmented
1 apple, cored and medium diced
1 small lemon (juice only)
1 cup green grapes, halved
1 cup whipped topping
1/2 cup maraschino cherries, chopped
1 pear, cored and medium diced
Directions
- Using an electric mixer, beat the cream cheese and sugar until fluffy. Stir in the pineapple and coconut. Add the orange segments. Add the pears and apples. Squeeze the lemon juice over the fruit. Add the grapes and whipped topping. Stir to combine.
- Rinse the cherries, and pat dry. Reserve 1 tablespoon of cherries for garnish. Stir remaining cherries into the mixture. Let chill in the refrigerator for 2 hours or overnight. Spoon the fruit salad into a serving bowl. Garnish with reserved cherries and additional coconut flakes.
