Ingredients
2 lbs sirloin steak (ribeye, T-bone, filet or NY strip)
1 tsp salt
1/2 tsp black pepper
4 Tbs vegetable oil, divided
1 orange, juice and zest
1/4 cup soy sauce
1/4 cup sweet chile sauce
1/4 cup hoisin sauce
1 Tbs rice wine vinegar
1 Tbs honey
2 tsp cornstarch
2 cloves garlic, minced
2 green onions, sliced
2 mandarin oranges, segmented
Directions
  1. Season the steak with salt and pepper. Heat a skillet over high. When hot, add 2 tablespoons of oil. Sear the steak on all sides until charred. Remove steak, and let cool.
  2. In a small bowl, combine the orange juice and zest, soy sauce, sweet chile sauce, hoisin sauce, rice wine vinegar, honey, and cornstarch. Whisk to combine until cornstarch is dissolved.
  3. Slice the steak into 1/2-inch thick pieces. Over high heat, add remaining oil to skillet. Add beef. Stir-fry until crispy and cooked to medium doneness for about 2 minutes. Add garlic, and cook for a minute. Add the sauce, and bring to a simmer. While stirring, let the sauce reduce and thicken slightly for about a minute. Add the green onions and mandarin segments. Stir to combine. Serve with rice if desired.
