Fried Frito Pies

Ingredients
3 cups Bob Evans® Mashed Potatoes (refrigerated)
1 cup canned chili, drained
3/4 cup Brookshire’s Sharp Cheddar Cheese, shredded
4 eggs, divided
6 cups corn chips
1 1/2 cups all purpose flour
vegetable oil, for frying
Directions
- In a large bowl, stir together the mashed potatoes, chili, cheese and 1 egg. In a food processor, pulse the corn chips to a fine crumb consistency. Pour into a shallow bowl. In another bowl, beat the remaining eggs. In a third bowl, add the flour. In a deep skillet, heat oil to 325° F.
- Using two spoons, shape the mixture into logs. Place on a parchment-lined baking sheet. Freeze for 45 minutes or until the mixture is firm enough to handle. Dip the logs into flour, shaking off any excess. Dip into the eggs. Roll in the chip crumbs. When well-coated, transfer to the oil. Fry in small batches until chips are golden, about 2 minutes per side. Transfer to a paper towel-lined baking sheet.
